Epitomising the face of eclectic seafood cuisine, is our long serving Executive Chef Krist Vatanopast. Serving over 20 years at The Lobster Cave, he has crafted an innovative and progressive menu drawn from his culinary influences from unique seafood techniques, his Asian heritage and by his fuel for culinary passion. He sources locally sourced produce to create fresh mouth watering dishes.

Scott Henley

Our Head Chef

As Head chef, Scott brings his years of culinary expertise to The Lobster Cave, where his skills of Contemporary Australian Cuisine compliments the restaurant’s unique flavours, and exuberant spirit. His deep affection for the sea inspires his love for Fusion style cooking where he is able to create innovative and rare flavours in the kitchen.

Jai Singh

Sommelier

Our Sommelier – Jai is an award-winning senior Sommelier, and drinks enthusiast. He is best known for winning two glass rating four years running for wine list of the year Australia/Gourmet Traveller at the Lobster Cave. With over 10 years of experience, his inspiration stems from a focus on the fundamentals, ensuring even the smallest details are accurate, creating an all-inclusive experience in both product and service. A true professional, Jai enjoys the harmony with flavours and a genuine, perpetual approach to hospitality.

Sue McKay

Hosting Extraordinaire

Sue Mckay, who’s talent is our recipe, is a natural when it comes to the culinary world. As our hostess for over 10 years, Sue’s greatest asset with Lobster Cave is her unique ability to build relationships and rapport. She believes that her greatest successes has come from learning and growing with the team at The Cave. There is never a dull moment for Sue, as her drive is steered by Lobster Cave’s culture and her ambition to create successful marketing campaigns and lively social media.
